Jayne’s Vegan Quinoa Veggie Burgers

Cook time: 40 minutes
Yield: 2-4 servings
2 cups cooked quinoa
1 large zucchini, diced (about 2 cups)
1 package of shiitake or your favorite mushrooms diced.
½ cup white or yellow onion, diced
½ cup cilantro, roughly chopped
¼ cup flaxseed meal
½ tsp garlic powder
1 Tbsp Coconut Aminos
Olive oil or Coconut oil for cooking
Add in your favorite spices:
Sliced heirloom tomato
Soy free Veganaise or your favorite healthy mayo alternative
- Sauté lightly the diced onion, mushrooms and zucchini just until slightly cooked in 1 tablespoon oil of choice. Don’t over cook or you will lose nutrients.
- Add cooked quinoa, all vegetables, cilantro, flaxseed meal, spices and coconut aminos to blender or food processor. Pulse until blended. Form into patties.
- Two cooking options: sauté in pan for approximately 5 minutes on Med heat/each side or put oven on 375 and arrange patties on parchment paper lined cooking tray. Cook for approx 10-15 minutes each side for total of 30 minutes. If you like them crispy you can pan fry them after baking to add a crunch! They freeze great! Just pop back into a 375 oven for approx 15-20 mins.
