Garden Party Citrus Dressing

Makes 1 ½ Cups

Ingredients

  • 1 Cup fresh mint leaves
  • 1 cup fresh basil leaves
  • ½ cup fresh cilantro leaves/stems
  • 1 avocado, pitted and peeled
  • 1 small shallot, roughly chopped
  • 2 ½ Tablespoons fresh lemon juice
  • 2 Tablespoons extra virgin Olive Oil
  • 1 Tablespoon fresh orange juice
  • 1 Tablespoon fresh lime juice
  • 2 Teaspoons Apple Cider Vinegar
  • 1 Clove Garlic, roughly chopped
  • ¼ Teaspoon Himalayan sea salt +

Instructions

In a blender, combine all ingredients with ¼ cup of filtered water and blend until smooth.  Add additional water 1 tablespoon at a time until desired consistency is achieved.  Season to taste with salt.  Store in fridge for up to 3 days.
