Paleo Meatballs
I love to make these for an easy meal prep for me and my family for the week. They are an easy grab and go lunch, snack or protein I can add to a simple dinner!
Ingredients
Units Scale
- 1 pound 100% grass-fed/finished beef
- 1 large egg
- 1/4 cup ground flax meal
- 1 garlic clove, minced or tsp garlic powder
- 1 tsp dried oregano
- 1 Tbsp Italian seasoning
- 1 tsp sea salt
- 1 tsp onion powder
- 1/8 cup goat/sheep or high quality shredded parmesan cheese (optional)
Instructions
- Preheat the oven to 350°F.
- In a large bowl, use your hands (or a wooden spoon) to combine all ingredients. The mixture should be smooth, but don’t over mix.
- Form the mixture into meatballs about 1 inch in diameter and place them on an ungreased rimmed baking sheet. Bake for 20-25 minutes, or until internal temperature of 160.
- Cool meatballs on baking sheet and then transfer to a glass container in the fridge, if not using right away. Will keep in the fridge 4-5 days….if they last that long!
