Roasted Roots and Bulbs

Roasted sunchokes

Ingredients

Sunchokes

Garlic

Onions

Avocado oil

Salt and pepper

Instructions

Heat oven to 425 degrees F.

Wash and cut sunchokes.

Cut stem ends off of garlic and onions but leave skin on.

Place veggies on a tray covered with baking paper and drizzle with avocado oil.

Sprinkle with sea salt and pepper.

Roast for 15 minutes. Flip and roast for another 10-15 minutes. Sunchokes should be soft and brown.

Pop onions and garlic out of skins.
