Blueberry/Mint Ingredients:
- 2 cups of water (or sub) 1 Can Full Fat Coconut Milk
- 2 cups of fresh or frozen blueberries
- 1/4 cup mint leaves, loosely packed
- 1/4-1/2 packet of Lyte show electrolytes (https://amzn.to/3RBeTJV)
Optional Add-in: Handful of favorite greens to amplify the nutrient density
Instructions
Directions for both:
- Add all the ingredients to a high speed blender and blend on high.
- Pour the blended mixture into popsicle molds (I like these: https://amzn.to/45DuyxV) leaving a small space at the top to allow for expansion as the popsicles freeze. Insert popsicle sticks or wooden skewers into the center of each mold.
- Place the filled popsicle molds in the freezer and let them freeze for at least 4-6 hours, or until completely solid. For best results, it’s recommended to freeze them overnight.
- Once the popsicles are fully frozen, remove them from the molds by running warm water over the outside of the molds for a few seconds to loosen them. Gently pull the popsicles out and enjoy your delicious and healthy homemade treats!
