Gut-Loving Protein Balls

Ingredients

- 1 cup rolled oats (slightly cooled — resistant starch)
- 1/2 cup natural almond butter
- 1/4 cup vanilla protein powder
- 2 Tbsp raw honey or maple syrup
- 2 Tbsp ground flaxseed
- 1 Tbsp chia seeds
- 1 tsp cinnamon
- 2-3 Tbsp unsweetened coconut milk (to bind)
- Optional: dark chocolate chips (70%+)
Instructions
- Combine oats, protein powder, flaxseed, chia, and cinnamon in a large bowl.
- Add almond butter and honey. Mix until a sticky dough forms.
- Add coconut milk one tablespoon at a time until the mixture holds its shape when pressed.
- Fold in dark chocolate chips if using.
- Roll into 1-inch balls and place on a parchment-lined tray.
- Refrigerate for at least 30 minutes. Store in the fridge up to one week.
